In our school we use universities names for our teams. We start with Texas Universities in 6th grade, Out of State Universities in 7th grade, and IVY Leagues in 8th grade.
I've used college names, sports teams, and sometimes I let the student's make up their names (the Mathemaniacs, Number Krunchers, and the Co-Efficients are a few they came up with when I told them to use a math theme).

To optimize student choice, I also like to allow students to pick their own teams names. You could ask them to come up with a name that meets certain requirements (based on the subject matter you teach) so they won't be totally in left field.
You can have the team create their own name by telling them to create a name for something new in a category for example a new ice cream flavor.
