Hi Daniel- It sounds like a cool course! I teach middle school engineering. This may not be of much use, but I will often allow the students to choose between 3 or 4 different builds for their capstone project. I make sure that the projects use similar materials and then I develop a rubric using http://rubistar.4teachers.org/index.php for each project. This enables them to have more "buy in" and it mixes it up for all of us. It's definitely more work, but is worth it.
