I would begin with a formative assessment on the first day of school, as writing workshops really focus on revision, peer review, providing mastery oriented feedback, etc... so without a piece of writing, it may be difficult to get kids really involved. For my formative piece, I focus on argument and have kids write a letter about why they should be my favorite student, and then we begin our writing workshop once it's done.
