What grade do you teach? How much of your class is learning English? I agree that shared writing is extremely important. You can also do interactive writing (where students write some of the words and/or letters).
While you're helping students develop vocabulary, sentence structure, and writing conventions, you should still give them the opportunity to engage in the writing process.

I would begin with a lot of shared writing you do together as a group. This allows you to be explicit in your instruction while also scaffolding support as needed. A nice thing to do after shared writing is to have the students all write about a shared experience (the art class from yesterday) independently using small dry erase boards. Starting with a question like, "who was there?" Having them write a word or two, then moving on to where/what happened, etc.
