There's several fun ways to teach counting, including with legos, goldfish, or even racecars! One website with some fun ideas is:
Dominos and balloons are also fun ideas for preschoolers. Just have fun with it, and tailor it to your classroom. They'll have fun regardless.
I would suggest www.tedd.org, it has a lot of wonderful routines for the younger grades.
