Here are a few ideas I have seen:
Animals, art, alphabet, earth/nature, numbers, transportation, dinosaurs, colors/shapes, Dr Seuss, ocean life, emotions.

I like to ask students which themes they are most interested in. They are even more engaged when they feel like they contributed to their own learning. Maybe on the first day, you could ask them to share some of their favorite things and then talk about patterns, when you hear kids offer the same ideas. From there, you could design themes that fit their interests.
In my son's pre-school class they focused on healthy eating, the planets, dinosaurs, insects (he loved that!), sea life, the world of Disney, and families.
Forest animals, dinosaurs, and arctic animals have also been really fun for me!
