The Flip video cameras are very user friendly, simple, and easy to download and work with. We are using them right now in a parent education class I am taking and everyone found them to be easy to use.

GoPro just sent me a free camera to use. I'll get back to you on it's performance. Testing it out Monday!
The Flip cameras aren't great on voice recording a group but we might start with those and then upgrade if we can find a better audio quality. And thanks so much for your responses!
I use the video camera on my iPad 4 with a Swivl. The iPad has multiple uses in my classroom, and with the use of the Swivl, I can walk my classroom and video without needing to have someone man the camera.
I've used my iPad with a tripod, and I've also used my iPhone. Both have worked pretty well!
